Ingredients:
1 can of Ocean Spray whole cranberry sauce
1 eight ounce bottle of French or Catalina salad dressing
1 pkg. of French onion soup mix
4-8 boneless chicken breasts
Tools:
large mixing bowl
mixing spoon or fork
rectangular baking dish
plastic freezer bag (optional)
aluminum foil (optional)
chopped walnuts (optional)
What to do:
All you hafta do is combine the cranberry sauce, dressing, and onion soup mix together. Mix this well until smooth. You can dip the chicken in the mixture, or pour the mixture onto the chicken after you place the chicken breasts in the baking dish. If you only have four chicken breasts, I recommend the dipping method rather than pouring. You can also marinate the chicken by placing it and the mixture in a ziplock-style freezer bag. Just put it in the 'fridge for as long as an hour, or even overnight if you wish. You can line the baking dish with tinfoil if you want, as it aids cleanup.
Bake uncovered in a 350 degree oven for 45 minutes.
Serves 4-8.
Items of Note:
Yes, you could use another brand of cranberry sauce, but Ocean Spray is made in New England! You can also use the jellied style of cranberry sauce if you want. Sometimes the onion soup mix comes in a box and has two packets in it. If so, you only want to use one packet for this recipe. If you'll be marinating in the freezer bag, I also recommend putting the bag on a plate or cookie sheet at the bottom of your 'fridge just in case the seal fails. Taking this precaution will save you no end of mess if the worst happens. And to be honest, I haven't tried this with chopped walnuts yet, but it sounds like it would be good.
Recommended Sides:
Mashed potatoes, cornbread, or sweet corn.
Danny's grandmother gave her the recipe for an old nostalgic favorite, namely, Cranberry Chicken. This tangy concoction is very easy and inexpensive to make, and you can use the mixture described here either as a marinade, baking topping, or even a glaze.
