"Lindy's Applesauce Cream"
Some things just go along with the fall season. Apple pie is one of them. Although perfectly fine by itself, when Lindy has friends over and serves apple pie, she likes to use an extra special whipped topping. Oh, not that weird, store-bought stuff that comes in a tub, no sir! Lindy makes a tasty treat called Applesauce Cream. And it's so easy to make, you won't believe it!
Ingredients:

2 cups whipping cream
2 cups applesauce
1 teaspoon almond extract


Tools:

large mixing bowl
electric hand mixer
measuring spoon
spatula
plastic wrap


What to do:

Add the cream to the mixing bowl and using your hand mixer, whip the cream until stiff. Gently fold in the applesauce and the almond extract with the spatula until it's mixed well. Cover the bowl with plastic wrap, chill, and serve.

Serves 6.


Items of Note:

I like almond flavoring, but if you want, you can halve the amount of extract, or use another flavor that goes with apples. You could also add a little cinnamon if you want, maybe an eighth or even a quarter teaspoon.

Once thoroughly chilled, you'll want to use the applesauce cream right away. It'll keep for a while, but after about a day, the moisture in the applesauce tends to drain from the topping and accumulate in the bottom of the bowl. The remaining layer of fluffed up topping is still tasty, and you can still use it, but it gets drier over time as more and more moisture drains out of it.

If you want to be fancy, you can top the applesauce cream with shavings of chocolate.


Recommended Sides:

Apple, squash, or pumpkin pie. Ice cream or any dessert that goes well with apples will do. You can even serve applesauce cream by itself!
